This is one of my favourite dessert recipes coz very rarely can you call an Indian sweet dish truly healthy. Milk and paneer both add to protein, calcium and vitamins. Its low on fat and sugar. It can be made as royal as you want with saffron n nuts. I personally find it amazing coz it takes very less time to prepare and tastes exactly like ras malai without all the hassles of preparation 🙂

Definitely must try.

Ingredients for serving 3-4 persons

  • 500-700ml milk (cows/ full fat/ buffaloes)
  • 1 cup paneer / cottage cheese ( approx. 150-200g)
  • 2-3 tsp roasted chopped cashews, almonds, pistachios
  • 1 tbsp raisins / kishmish
  • 2tsp sugar/ stevia/ jaggery (as per sweetness desired)
  • ¼ tsp cardamom powder / elaichi powder
  • 4-5 saffron strands (optional), 4-5 drops rosewater (optional)

Method

  • Dry Roast nuts , chop and keep aside.
  • Crumble/ grate paneer and wash it under running water ( for homemade one to remove any remaining acid content)
  • In a wide heavy bottom pan, boil milk and keeping the flame on medium stirring occasionally till reduced by ¼ – ½ quantity. (it should thicken).
  • Heat and crush saffron strands in 1-2 tsp milk.
  • Further add saffron milk, sugar/stevia/jaggery, nuts, crumbled paneer. Mix well.
  • Boil for 2-3 minutes or till the paneer gets cooked well completely.
  • Switch off flame, add in cardamom powder, rose water and stir well.
  • Serve paneer kheer chilled garnished with few dry fruits.

Tips

  • Prefer only fresh homemade/ store bought paneer.
  • Adjust the consistency of kheer by adding more milk.
  • Do not keep boiling/ simmering the milk a lot after addition of paneer as it may curdle the milk.
  • Thickness of milk and quantity of paneer can be a personal choice.
