Soups are always associated with winters but summer is a great time to try out nutritious cold soups. This soup is super easy & with very few ingredients. Its great as a mid meal drink or pre meal appetizer or even a summer party welcome drink. The flavours are refreshing and with a perfect hint of garlic-mint-cucumber. Must must try this to beat the scorching heat!
Ingredients (Serves 1-2)
- Cucumber- 2 small / 1.5 medium.
- Curd- 4 Tbsp OR Greek Yoghurt- 3 Tbsp.
- Mint Leaves 5-6
- Garlic- 1 pod
- Lemon Juice- 1 tsp
- Salt & Pepper to taste
- Water- to adjust consistency
Method
- Peel & Cut cucumber into thick slices halved (semicircles).
- Wash the mint leaves, keep aside.
- In a blender add cucumber, curd, mint leaves, garlic, lemon juice, salt & blend.
- Make a smooth paste, add little water to adjust consistency (It will be little grainy & thick soup).
- Pour in a vessel, add pepper powder and taste test. Chill for at least 2-3 hours.
- Serve chilled garnished with mint leaf.
Tips
- Using Greek yoghurt increases protein value.
- Can top it with diced sweet peppers and cucumber for more nutrition & texture.
- You can vary the fresh herbs- mint/basil/curry leaf/parsley for new flavours each time.
- You can add ½ white onion while blending to add more cooling effect in summer.
