Who doesn’t enjoy pipin hot Gajar Halwa this season. The Red carrots are so inviting. In this perfect recipe, we twist the sweetener used, skip the sugar & make it very healthy. Give it a try you will definitely enjoy- Guilt Free!!

Ingredients (Serves 3-4)

  • Grated Carrots 2.5- 3 cups
  • Chopped Dates 1 cup
  • Khoa/Mawa 50g
  • Milk 1 cup
  • Ghee 2 tsp
  • Milk Powder 2-3 tsp (optional)
  • Mix Roasted Nuts (optional)
  • Coconut Sugar- as desired (optional)

Method

  • Soak chopped dates in warm milk for minimum 2 to max 4 hours.
  • Add khoa/mawa in a heavy bottom pan/kadhai and saute it well till light brown.
  • Remove and keep aside.
  • Dry roast the nuts in same pan / roast in microwave and keep aside.
  • In the same pan add ghee and the carrot.
  • Cover n steam for 2-3 mins.
  • Now add chopped dates along with soaking milk and cook covered for 3-4 mins till it comes together.
  • Once cooked add khoa, mix, taste for sweetness. Add coconut sugar and Nuts if desired. Finish with a tsp of ghee.
  • Serve hot without guilt 🙂

Tips

  • Adding skimmed milk powder can increase the protein content.
  • Same can be prepared with beetroot and apples too.
  • Make sure to add little fat (from ghee or milk or khoa) as it helps on absorption of vitamin A from carrots.
