An interesting twist to your regular paneer chilli/ chicken chilli is this. Chestnuts give a great crunchy texture. Lot of veggies can go in and yet would be loved by children and adults alike. Not too high on fat or any refined stuff, this is great version of a healthified fast food. Quick to make and minimal ingredients.

Ingredients (Serves 2-4)

  • Chestnuts 10- 15 big ( big pieces)
  • Mushrooms 7-8 big (thick slices )
  • Onion 1 medium (chopped)
  • Spring onion greens 1 stalk ( chopped)
  • Garlic 7-8 pods ( sliced)
  • Ginger 1/2 inch ( grated)
  • Green chillies 3-4 (slit vertically
  • Red Chilli powder- as reqd
  • Soy sauce 3 tsp
  • Sriracha/red chilli sauce 2tsp
  • Tomato sauce 1tep
  • Salt & Pepper to taste

Method:

  • Heat oil in a wok.
  • Add sliced garlic, let them soften.
  • Then add slit green chillies, grated ginger, chopped onions, capsicum. Saute and cook for a minute.
  • Add pieces of chestnuts and mushrooms, mix cook covered for 1-1.5 min.
  • Add all oniom greens, sauces, salt.
  • Mix well.
  • Cook on high flame (flambe) for a minute or two.
  • Serve garnished with onion greens.

Tips:

  • Cooking on high flame gives a great flavour.
  • You can add boiled sweet corn, other veggies like carrot, sweet peppers to your liking.
  • Chestnuts should not be too soft, maintain a bite
  • You can prepare chilli garlic pepper chestnuts without the sauces too use fresh ground pepper.
  • You can skip mushrooms & also add tofu or paneer to the same.
