Who doesn’t love Pav Bhaji and who here is a fan of khichdi? So even though khichdi is one of the healthiest indian meal, it can get boring at times and not just kids even adults frown at times. So we have made khichdi into an amazing fun recipe which would be loved by all. It has all the best things from khichdi & pav bhaji combined.

Ingredients (for meal for 2-3)

  • Boiled Rice/Leftover rice-1/2 cup
  • Finely Chopped Tomatoes- 1/2 cup
  • Boiled Mix Sprouts/ Dal/ Mix of both-1/4 cup
  • Finely chopped Onion- 2 Tb
  • Finely Chopped Capsicum- 3 Tbsp
  • Frozen / boiled fresh peas- 2 Tbsp
  • Boiled Mashed Potatoes-1/4 cup (optional)
  • Garlic crushed- 2 Tbsp
  • Pav Bhaji Masala – 2 tsp
  • Red Chilli powder- as reqd
  • Turmeric-1/2 tsp
  • Salt, Lemon Juice- to taste
  • Coriander- garnish

Method

  • Slighty mash the boiled sprouts, mix with rice and keep aside.
  • In a deep pan heat oil, add the turmeric, garlic & onion saute. Add all other vegetables and saute till soft.
  • Add other spices/ masalas and cook for half a minute.
  • Add all the mashed mixture and cook till bubbling. Add water as desired consistency.
  • Add salt, lemon to taste.
  • Serve hot garnished with fresh coriander leaves & a dollop of butter ofcourse!

Tips

  • The process it just like pav bhaji, add in cooked rice n dal/ sprout mix instead of potatoes.
  • You may vary the vegetables to your liking can add cauliflower/peas to liking.
  • Keep the proportion of dals/sprouts : rice as 2:1 to make it most healthy combo.
  • For kids a little garnish of cheese occasionally would make them love the khichdi
