Every once in a while we get bored of eating the same old stuff but also don’t want to eat from a restaurant, yet want something new.. Foodie health freaks will definitely get what we mean! So we bring you this Desi Vermicelli (Seviyaan) made like Singapore style noodles. It has a unique flavour and enjoyed be all, yet simple to make! Now that’s a win win!

 

Ingredients (for meal for 2)

  • Wheat / Rice Vermicelli-1 cup
  • Mix vegetables of your choice- 1-1 ½ cup all vertically cut/ juliennes

We used capsicum, onion, babycorn, purple cabbage, french beans .

Tempering

  • Sesame oil- 1- 2 tsp
  • Roasted Sesame- 1 tsp
  • Garlic slivers- 2-3 medium pods
  • Dry red chilly- 2nos
  • Soya sauce- 2 tsp
  • Sugar/ Brown sugar ½ tsp
  • Lime juice ½ tsp
  • Turmeric powder ½ tsp
  • Salt to taste

Method

  • Boil water in a pan, add vermicelli and cook till done (like pasta). Keep aside in a colander( sieve). We prefer NOT boiling it with the tempering like in upma coz pasta method retains the flavour more.
  •  In a wok/ broad pan, heat sesame oil, add ½ sesame seeds, turmeric powder, garlic, red chilli. Then toss in all the vegetables and cook covered till cooked but crunchy stage.
  • Add the salt, sugar, sauce and the cooked vermicelli. Toss on high flame for 1 minute, taste check & Voila!
  • Serve hot garnished with roasted sesame seeds and onion greens!

Tips

  • You can add tofu/beans/sprouts to make it healthier and complete meal.
  • Spring onions & Mushroom taste great.
  • Lot of recipes suggest to add curry powder to Singapore style noodles, we skipped it.
  • Use regular vegetable oil if sesame oil not available, but it reaaly adds to the flavour.
  • You may use any type of vermicelli, noodles, pasta for this, keep it wholegrain though!
