Many people get bored of eating steamed sprouts / sprouts salads and don’t know how to incorporate pulses in their diet in a tasty different way! This one is for them. The recipe is basic yet nutritious and loaded with fibre, protein, vitamin, minerals. What’s more depending on the portions you eat / toppings you use you can use this as a Sunday breakfast/ evening snack/ lunch or dinner along with a soup maybe?
Ingredients for making 2 pancakes
- Sprouted Moong raw- 1 cup
- Oats flour – 1 Tbsp
- Ginger- ¼ inch pc
- Garlic – 3 pods (optional)
- Green chilli- 1 – 2
- Water to adjust consistency
- Salt- as per taste
- Toppings (optional and by choice)
- Grated zucchini- 2 tbsp
- Grated Carrot- 2 Tbsp
- Grated Beetroot- 2 Tbsp
Method
- Blend the ingredients for pancakes in a blender until grainy texture, not very smooth. Adjust taste for salt and spiciness. Consistency should be pourable from ladle like uttapa.
- Heat a non-stick pan, brush with little oil and drop 2 ladles spread evenly, immediately top with grated veggies and cover it with a lid.
- Once done, the pancake will separate from pan, flip it over if you want ( you may skip flipping as veggies get cooked in steam).
- Serve hot with chutney / curd.
Tips
- Can vary the grated vegetables as per choice.
- Add 2-3 leaves of spinach in batter while grinding.
- Top with grated paneer/ cottage cheese to increase the protein content.
